Born in Leith. Married to Bechan and has 4 children.

Education : Started on a Youth Training Scheme at the age of 16 for Scottish & Newcastle and then took a City & Guilds Scotvec course in cookery at Edinburgh’s Telford College

Career : Worked on The Royal Yacht Britannia, Leith; The Balmoral Hotel in Edinburgh; Greywalls in Gullane and the tiny, cramped kitchen on board the famous Royal Scotsman train. Partnered with James Sankey to open Oloroso restaurant in 2001 but Sankey died in 2002 when Tony was 35. There followed a string of awards for Oloroso and its team, including Best Restaurant, Scottish Chef of the Year and Best Cocktail Bar. Then opened Roti in 2005 with Frank McMorrow and moved to bigger premises 2007.

Anand Sehgal Head Chef was born 1954 in Amritsar in Punjab India, He started his career with the prestigious Hotel chain ITDC. Starting as apprentice and working for 15 years with the company’s master chefs picking up all the tips and techniques from all over the Indian sub-continent Anand then travelled to Singapore, Thailand, Mongolia, China and Mexico to open the hotel group's new restaurants. Anand then moved to Edinburgh in 2001 to open Oloroso with Tony before moving to Roti when it opened in 2004. Anand now Heads the Roti kitchen in its new premises on Morrison street.
