Sam & Eddie Hart

Their mother grew up in a small unspoiled farming village on the remote northwest coast of Mallorca. The village has changed remarkably little since medieval times and is where they fell in love with the Spanish way of life. Their family still owns several properties in the village which can be let. The village and properties are wonderfully rustic and unspoiled but not designed for those too attached to their creature comforts. Their father, Tim, is the well known hotelier, restaurateur and owner of the legendary Hambleton Hall Hotel, whose restaurant has maintained a Michelin Star for over 20 years.

Career : Owners of the very popular Fino's Spanish restaurant & Tapas Bar in Charlotte Street in London opened in 2003 followed by Barrafina in 2007.

Eddie spent a year studying the language in Madrid while Sam opened his own successful cocktail bar and nightclub in Mexico City – Colmillo. On his way back from Mexico, Sam spent six months in Barcelona eating his way around the wonderful restaurants and bars, all in the name of research. Eddie gained his experience by working in practically every department at Hambleton Hall before moving to Harts restaurant where he took on a management role.

Fino was the brainchild of Sam and Eddie Hart, two young brothers and hispanophiles, who, due to their love of Spanish food and upbringing in the restaurant industry, have the perfect background for bringing fabulous Tapas to London. Head Chef, Jean Philippe Patruno, who trained at the 3 Michelin Star Chez Nico, has been with them from the start. He works tirelessly in sourcing the best ingredients from the UK and Spain.

The brothers are to relaunch iconic Soho eaterie Quo Vadis as a “hotel-style grill room” in May 2008. They acquired Quo Vadis from Conduit Street Restaurants late 2007, and are currently refurbishing the restaurant and plan to reopen it as a British-style brasserie.
