Dev Biswal

 Career : Dev Biswal grew up in Calcutta though now returns to Mumbai on a regular basis. He trained at the Dubai Sheraton, before moving to London, aged 26 in 2003 for spells at Mangoes and Eriki. Biswal is also a director of Quex Park, with responsibility for catering.

Dev Biswal is the Executive Chef at what was The Indian Princess restaurant in Margate now re-introduced as The Ambrette.

From the molecular school of gastronomy Dev spends two days a week on R&D, experimenting with new food combinations. He also researches the chemical composition of his foods and extends the same scientific approach to his wine selection.
